Job Category: Services and Asset Management DeliveryJob Description:Secure Journeys has been selected to operate Australia's Onshore Immigration Detention Network on behalf of the Australian Government.Spotless, as a subcontractor to Secure Journeys, will be responsible for preparing and serving culturally diverse, nutritious meals contributing to the overall health and well-being of those in the centres.With the new contract underway, we currently have a full-time role available for an Assistant Catering Manager to join the Spotless team.This role is dedicated to supporting health and wellbeing by delivering nutritious, culturally appropriate, and medically tailored meals, ensuring compliance with all food safety and health standards.What you'll doThe role has a broad remit, with key responsibilities outlined below:

Support the Site Catering Manager in overseeing the delivery of catering services and management of stores at a Centre.
Oversee the assembly, preparation and production of food requirements and service in an economic fashion to assist with delivering catering services within budget.
Provide direction to catering assistants to ensure food is prepared to specification and on time to meet service delivery demands and that the kitchen is kept in a clean and hygienic state.
Roster and supervise Catering Services team ensuring that all Catering Services team members are appropriately and adequately trained and, where necessary, relevantly certified.
Ensure the Catering Services team are trained to on HACCP-based Food Safety Management Practices always ensuring strict adherence.

What you'll bring

Certificate IV in Hospitality (Kitchen Operations) or equivalent required.
Food Handlers Certificate required.
Hospitality operational service delivery experience, with solid people management skills leading catering teams.
Extensive knowledge of food services and relevant food products.
Knowledge of statutory obligations of Food Safety Standards and Hazard Analysis Critical Control Points (HACCP) Program.
