The Sous Chef will be responsible for managing kitchen operations efficiently and safely, delivering our range of modern Australian and Italian meals at a consistently high standard.Reporting to our Head Chef, tasks will include:
- Supervising preparation, cooking and seasoning of food during cooking and provide training / demonstration to Preparation Cooks and junior chefs
- Preparing and cooking food using a variety of techniques including grilling, boiling, baking, frying
- Contributing to menu planning and estimates
- Engaging effectively with suppliers in ordering daily supplies and supervising receipt and storage of stock
- Ensuring food is stored in temperature-controlled facilities as per health safety requirements.
- Ensuring the cleaning schedule is diligently followed by kitchen staff
- Applying health and food safety principles
- Certificate IV in Commercial Cookery or equivalent or relevant experience to substitute
- Minimum 3 years experience in commercial kitchen
- Experience working in an Italian cuisine restaurant
- Excellent communication and interpersonal skills
- Ability to supervise and train junior kitchen staff
- Time management skills
- Excellent organisational skills
