SALARY $76,515 + Superannuation
SUMMARY
Designed to bring energy to The Lawns-National Triangle from day to night. Our two venues, Ballyhoo & Rosa’s serve a variety of dishes from breakfast to dinner. We are now looking for a qualified full-time Chef De-Partie who can understand and support our business culture at these venues. You will be responsible to working for both Ballyhoo & Rosas which share the same kitchen side by side and located at the Lawns of the Lobby.
DUTIES
- Assist Head Chef and Sous Chefs with menu development and estimating food and labor costs.
- Controlling food preparation and managing waste of assigned station.
- Demonstrating cooking techniques and assisting in food preparation and service ensuring smooth delivery of food service to customers.
- Collaborate with Head Chef to provide training, guidance and supervision to other junior kitchen staff such as cooks and kitchen hands.
- Quality control, Inventory and stock management ensuring kitchen is fully equipped with required items.
- Examine the food to ensure the quality & quantity of food ensure customer needs.
- Health and safety compliance- Ensure safety of our own and the kitchen staff during each shift by following appropriate safety standards provided by the restaurant & OHS Guidelines.
- Ensure proper maintenance, cleaning, and operation of all kitchen equipment.
REQUIRED SKILLS
- Strong culinary skills including knowledge of sea food, Blend of Italian, Modern Australian, Mediterranean and South American style dishes and sweets are preferred.
- Experience as a Chef in à la carte venue (preferred).
- Strong Knowledge of Wood-fired cooking and Pizza making such as Margherita, Pepperoni, Prosciutto, Puttanesca, etc. is preferred.
- Excellent planning, time management, and organisational skills.
- Ability to work under varied rosters (Weekends and Public holidays and some late nights)
- Knowledge of Food Safety and OH&S standards and compliance
- Preferred experience about 2-3 years as chef
- A trade certificate (C-IV or higher) with relevant qualification to Chef is preferred.
