Deviation Road is a family-owned winery nestled on 40 hectares in the stunning Adelaide Hills. We're renowned for our traditional method sparkling wines and small-batch still wines-primarily Pinot Noir and Chardonnay. Our philosophy is simple: pursue excellence at every step.We're looking for an experienced and motivated Assistant Winemaker to join our passionate, hands-on team. Working closely with the owner and winemaker, this full-time role offers the opportunity to be involved across all stages of the winemaking process-hands on and creative-with a strong focus on traditional method sparkling production.What You'll Do
You'll play a key role in all facets of production, including:
  • Vintage operations: press work, juice treatments, fermentation management
  • Sparkling wine production: tirage, riddling, disgorging, and dosage trials
  • Still wine management: barrel programs, blending, filtration
  • Bottling operations: oversee bottling line and ensure quality standards
  • Winery records: maintain detailed records using Vintrace
Job Requirements You'll thrive in a small, quality-focused team and bring:
  • Tertiary studies in Oenology
  • At least 3 years of experience in an Assistant Winemaker role (essential)
  • A keen interest in (and ideally some experience with) sparkling wine production
  • Strong practical skills and confidence operating cellar machinery
  • A collaborative attitude and willingness to contribute to all aspects of the winery
  • Forklift licence and experience (essential)
  • A valid driver's licence and own transport (essential)
Bonus Skills (Highly Regarded)
  • Vineyard experience
  • Mechanical aptitude or equipment maintenance experience
  • Passion for Pinot Noir, Chardonnay, and méthode traditionnelle
