- Ensure compliance with the Food Safety Plan and maintain high food standards in quality and presentation
- Manage and supervisor casual staff, including creating rosters and providing feedback on their performance
- Collaborate with the Executive Chef and Executive Sous Chef on menu development and food standards
- Maintain proper stock rotation and manage monthly stocktakes
- Be aware of and control food and labour costs
- Act as a Team Leader, providing pre-event briefings and accepting higher responsibilities during the Sydney Royal Easter Show
- Uphold excellent kitchen hygiene standards
- Report equipment repairs and maintenance requirements promptly
- Maintain a positive working relationship across the organisation
- Commercial cookery qualification
- Food safety, hygiene and HACCP qualifications
- WHS Training
- Supervisory experience in a multifaceted operation
- Proficiency in Microsoft Office Suite
- Familiarity with Momentus or events software is desireable
- Report equipment repairs and maintenance requirements promptly
- A dedicated team player who leads by example
