Supervise and manage designated kitchen sections to ensure timely and quality food production
Oversee food preparation and cooking across all stations in line with recipes and presentation standards
Support the Head Chef in day-to-day operations and assume leadership in their absence
Maintain food consistency, portion control, and plate presentation in alignment with menu guidelines
Participate in menu planning, development of specials, and implementation of seasonal offerings
Ensure proper storage, rotation, and labelling of ingredients to minimise waste and maintain freshness
Compliance & Food Safety
Ensure full compliance with food safety and hygiene standards (HACCP) across all sections
Maintain up-to-date records for temperature checks, cleaning schedules, and allergen management
Uphold safe chemical handling practices and ensure proper use of cleaning products
Enforce personal hygiene standards and food handling procedures among kitchen staff
Cleaning, Dishwashing & Waste Management
Participate in and oversee general kitchen cleaning duties including end-of-shift pack-downs
Oversee dishwashing processes to ensure cleanliness and operational efficiency
Ensure proper segregation, storage, and disposal of kitchen waste in line with sustainability goals
People & Team Support
Mentor and train junior chefs and kitchen hands to support skill development and succession planning
Assist in rostering, break management, and task delegation to support operational flow
Foster a positive, respectful, and productive kitchen culture in line with company values
Service Standards & Communication
Ensure expectations of food quality and timely service are consistently met during service periods
Liaise with front-of-house and events teams to ensure clear communication and seamless service
Manage and escalate equipment faults or stock shortages promptly to reduce service disruptions
Assist with receiving, checking, and storing deliveries to ensure quality and reduce loss
Minimise wastage by adhering to par levels and utilising ingredients efficiently
